If you ask me, the best Chenin Blancs always have bit of residual sugar. Just a few grams will enhanced every single flavour. With Dryades, expect the gourmand nose to match exactly the palate and mouthfeel. Caressing honey, juicy and ripe quince and pears, zesty candied grapefruit and marmelade and all the other usual suspects that you are entitled to expect from Chenin.

60/100 years old vines.
Manual harvest in small crates. Spontaneous fermentation with indigenous yeast. Vinification and elevage without added sulfites. The elevage took place in oak barrels. Elevage of 9 months on lees. Full malolactic fermentation. Bottling early July 2022.
