Elsa made this tonic different from other tonic by replacing quinine by gentian root. She then infused with clementine peel and raw beetroot (hence the color). Bergamot and citron create a unique tonic with a pleasant bitterness, a light touch of lavender, and once again, no sugar, just beautiful length and texture 💫

Tech facts:

First fermentation with Kefir grains for 48 hours. Second fermentation without the grains but with a mix of citrus for 72 hours. Then the whole batch was cold infused with beetroot, lavender and gentian for 48 hours. Bottled without fining and with a light filtration. Most products are fetched in Alsace and are biodynamic. All products used in the making process are organic and from France. All products are unpasteurized, unfiltered or lightly filtered and naturally carbonated.
