60 days of skin contact! For such a long maceration you could usually expect coarse tannins, overly ripe tropical fruits and barely any acidity. You see. it coming right? It's kind of the opposite we're having here 😅. Silky tannins, profound mouthfeel, apricot, juicy flat peaches and this typical thyme flower fresh spiciness. With vines growing 10 minutes away from the Sea on pebbles, Vincent's wines always combine fresh breezes and fruity generosity.

Tech facts: The bunches are selected and destemmed. Spontaneous fermentation with indigenous yeast occurred at 20°C temperature. 60 days on the skins with a few pumping over and punching the cap. The wine is then matured in stainless steel tank for 6 months until bottling. No Pesticides. No fertilizers. No added SO2 Unfined. Unfiltered.
