With Le Rouge, Simon, a former chef, aimed to create a bottle that's opened for the aperitif or with a piece of meat in those cheerfully noisy bistros of the French capital. With its notes of blackcurrant, lavender, and black olive heightened by the sharpness of red berries, this wine exudes the energy of Friday evenings where nothing is planned, but everything is possible.

Tech facts:
Manual harvest. Spontaneous fermentation. 1gr SO2 added at bottling. No herbicides, no mineral fertilisation, no pesticides. The grapes are coming from the Domaine du Petit Oratoire (Lori Haon) in the Gard, were vinified as whole bunches in concrete tank. 12 days on the skins. Bottled without fining and filtration.
