Leitmotiv is a blend of red fruits, Sichuan pepper from Alsace, morello cherry, and dehydrated rosehip from Kaysersberg on a base of kefir grain fermentation. The fruits undergo a 10-day maceration, and the pepper for 3 days. The bubbles are fine and pleasant. It's a literal explosion of fruits and you won't believe that it only contains 2.8 gr of sugar/Liter 🤯.

Tech facts:
First fermentation with kefir grains for 48 hours. Second fermentation without the grains but with Griottes Cherries (morello-like) for 72 hours. Then, the whole batch was cold infused with Sichuan for 48 hours. Bottled without fining and with a light filtration. Most products are fetched in Alsace and are biodynamic. All products used in the making process are organic and from France. All products are unpasteurized, unfiltered or lightly filtered and naturally carbonated.
