Manual Harvest is small wooden crates. No pesticides. No fungicides. No weedkillers. Gravity pressing, settling by natural decantation, indigenous yeast fermentation, no temperature control. 40 % stainless steel tank / 59 % oak barrels. 20 to 30 months ageing on lattes.
