If you love Aligoté or never tried it before, you're in for a treat because the domaine de la Varenne has some of the oldest and healthiest aligoté in the appellation.
Binchot is what Laurent calls the "Mémé", a capricious grandma that produces very little but who does it with a lot of wit. Following the nose that would make your mouth water in the middle of the Sahara, the wine offers bright flavours of peach, lime zest, apple and a field of white flowers. I bet that's the closest experience you can get before turning into an actual bee 🐝. Laurent produces three aligotés. This is the dry, tension, acidity one although it truly has that Aligoté generosity you should be looking for. It keeps you on your toes 👀

Limestone and clay hills facing East. 65 years old vineyard of 25 acres located on the commune of Culles Les Roches in the Côte Chalonnaise appellation. Spontaneous fermentation and élevage 'à la Bourguignonne' in old oak barrels (only two!). Unfiltered.
