Aux Vergers is made from vines that are planted on blue rock soils, which is magma that has cooled down with water. It's Cosima's favourite vineyard. This 100% gamay noir offers a seductive bouquet of medicinal herbs, a bit like Coca Cola, with generous notes of blackberries and black cherries. Plush tannins, tart acidity and silky mouthfeel. A perfect gastronomic Beaujolais to accompany a plate of charcuterie.

Tech facts: 

70 years old vines with a 25HL/HA yield.

Vinification: Whole bunches are handpicked in small crates, strict selection in the vineyard, followed by a very gentle and slow pressing using the château’s centuries-old vertical press. 12 days of whole-cluster, semi-carbonic maceration, slow pressing, then fermentation with native yeasts in cement tanks for 8 months.The press also yields a naturally clear must that does not need to be filtered or clarified. 


Terroir: Aux Vergers is a single vineyard at 350m planted 70 years ago on blue schist soils.

She began the conversion of all 6ha of family vineyards to organic farming in 2019, utilizing agroforestry and cover crops to create an integrated landscape that brings nature into the vineyards. She utilizes 15 different cover crops, rotating and adapting each to suit the needs of the parcel, which creates natural biodiversity and a true polyculture with healthy, living soil, which also counteracts erosion.
