A Capella is a nod to Serge's experience in the local choir called "The Wild Ducks". His idea behind it was to remove the superfluous of a wine to keep its purity and focus. A flawless scent of acacia, linden blossom, white peach and citrus fruit comes out of the glass. The palate is smooth with a full structure and gentle acidity. Tangerine, peach, mango, candied lemon, chamomile are among the many notes that this wine will get you on a fresh plate. My pairing suggestion would be grilled halloumi and vegetables or a generous Moroccan Couscous.

18 years old Roussanne on clay-limestone soils.
40 years old Grenache vines on a vein of grey marl.
Harvested in small crates. Direct press, spontaneous fermentation in stainless steel tank. Assemblage in December 2021, bottled early May. No herbicides, no mineral fertilisation, no pesticides. Bottled without fining and filtration.
