A limited edition of Simon’s iconic Parisian 'Rouge de Bistrot.' This time, it’s a blend crafted with grapes from Clément Jeannoutot, grown on the slopes of Mont Ventoux. The black pepper notes of the Syrah meet the crisp tension of Cinsault and the generous dark fruit of Grenache.

Tech facts: 
Manual harvest. Spontaneous fermentation. 1gr SO2 added at bottling. No herbicides, no mineral fertilisation, no pesticides. The grapes were vinified as whole bunches in concrete tank. 12 days on the skins. Bottled without fining and filtration.
