Viognier is a grape variety that can sometimes be a bit heavy, dense, and frankly short on the palate. But not here!
Simon and his friend Lori (from the Petit Oratoire estate) achieve a masterstroke by harvesting and producing a Viognier full of apricots, flat peaches, orange blossom, and even ripe pineapple, all while maintaining an incredible freshness š¹
The 5 days of maceration give the wine its freshly-pressed orange juice color and addictive roundness. Orange is a beautiful preview of what his "Jupiter"Ā cuvĆ©e is like š

Manual harvest. Spontaneous fermentation. 1gr So2/Hl added at bottling. No herbicides, no mineral fertilisation, no pesticides. The grapes are coming from the Domaine du Petit Oratoire (Lori Haon) in the Gard, were vinified as whole bunches in concreteĀ tank. 5 days on the skins. Bottled without fining and filtration.
