Le Chien Rouge 2022

Called after his dingo dog named Marcel 🐕, Le Chien Rouge (Red Dog) stands out by the unexpected note pairings that catch you off guard. Generous yet light, complex yet accessible, its palate unfolds clean notes of strawberry sauce and black plums that come with delicates touch of leather and dried herbs. This great mouthfeel beautifully contrasts with the zesty sweet orange-like acidity that bites your tongue on its way out. As the wine opens, you'll be surprised by its tasty cinnamon and baking spices twist. Only 800 bottles of this unicorn 🦄 have been produced. The rarity factor is high for this cuvée which is ,to me, the pinnacle of Vincent's craft. The luckiest one will be able to age it.

For maximum effect, pair it with aromatic spices and nightshades vegetables. Think tajine, Mexican stuffed peppers or Chicken Chawarma.

Tech facts: 3 weeks maceration on the skins. The bunches are selected and destemmed. Spontaneous fermentation with indigenous yeast occurred at 20°C temperature. Several pumping over and punching the cap. The wine is then matured in stainless steel tanks on fine lees.
