Nicolas is part of a new wave of winemakers championing an appellation with a bright future: the Hautes-Côtes de Nuits 🙏. Long overlooked for their lack of ripeness, the appellation shares the same terroir as the more prestigious mid-slope Premier and Grand Crus, yet its wines are now seen as hidden gems snapped up at far gentler prices.The reason? Climate change. Plain and simple.
Born from a small 17-are plot planted in 2003 on clay-limestone soils, 'La Vacherotte' is a testament to patience. With exceptionally low yields and a 2-year ageing period in old oak, this whole-cluster Pinot Noir offers a rare purity. It delivers the vibrant, raw elegance of the Hautes-Côtes de Nuits.
I personally love its vivid attack, bursting with red fruits, which combined with its purity and raw chewiness delivers a laser-sharp precision on the palate. The tannic structure is restrained and promising. You'll find all the hallmarks of a local Pinot Noir — thoroughbred, with notes of forest floor that carry an almost menthol-like quality. A wine that takes you back to the finest vintages of the Côte de Nuits, such as 2010 👌

The plot “La Vacherotte’ is located at the North of Beaune. 23 years old vineyards. 350m altitude. Yield is 20 hl/ha. Manual harvest with a highly strict selection. Whole bunches on all reds. The alcoholic fermentation occurs in a concrete vats. Then it is transferred in 5 to 10 years old French oak barrels. Malolactic fermentation occurs then. 2 years of ageing in oak barrels. Racked by gravity without pumping. Unfined and unfiltered.
