Despite that 2022 was a warm year in Vouvray, this Clairière is all about freshness and generosity. It starts with a basket of fresh and ripe basket of golden apple, quince and pear and comes with a delicate and lingering touch of honey, which paired with the subtle grapefruit zest and raw ginger, lightly coat the tongue and inner cheek with a thin layer of happiness. A salty backbone extend the flavourful fruits and the sip finishes like a chamomile tea with one or two extra honey spoons. This just bring me to my childhood.

Tech facts:
40/60 years old vines.
Manual harvest in small crates. Spontaneous fermentation with indigenous yeast. Vinification and elevage without added sulfites. The elevage took place in sandstone jar (75%) and in stainless steel tank and old barrique (25%). Elevage of 9 months on lees with light steering. Partial malolactic fermentation (80%). Bottling early July 2022.
