The site (or climat) of this vineyard is called 'Chaud Eau' (Warm Water), named after a spring that used to stay lukewarm at the same temperature year-round. The spring is not active anymore but the plot kept its name. I love this wine because it is an oaky Chardonnay that I actually like. The oaky notes are integrated, woven into the Chardonnay's typicity. It's like make up nicely done, highlighting natural beauty. Don't miss this wine from Sophie and David. Tech facts:
2024 was a rather fresh vintage. The soil consists of clay-limestone, with one meter of clay sitting atop a limestone shelf. The plot is located at an altitude of 250m; to balance this, the vines are north-facing, making it the coolest site on the estate. Manual harvest. Spontaneous fermentation. Aged for one year on the lees in 5 to 6 years old demi muids (600L). This is followed by 3 months of blending in stainless steel tanks. No SO2 added during pressing, natural malolactic fermentation. Bottled with a pinch of sulphur. No herbicides, no mineral fertilisation, no pesticides. 55 years old vineyards. Yield is 50hL/h. Bottled without fining and filtration.
