Mire La Mer 2019 is a very special bottles in many respects. 
The harvest season got off the wrong foot. Heavy rain occuring just before the harvest is usually a bad news for the acids and the concentration. However, Paul turned it into one of his most iconic vintage.
Going with the flow, following his instinct, Paul aligned all the planets to create a wine so good and different that the appellation wasn't ready for it. They refused the cuvée into the appellation., hence the VDF instead of Corbières. Since, they have reintroduced the cuvée as Corbières.

Mire la Mer is a wine made from parcels located near the Mediterranean Sea and in that case, its influence is insane. Besides the luscious black currant notes, truffles, leather and anise, the notes of sea weed and oyster water stand out. We can almost feel the breeze of salty air coming from the salt marshes of Peyriac. It is undoubtedly a gastronomique wine. Beautiful pairing ahead with oysters but I do believe that his defined identity deserves a bold and audacious pairing.

Ready to drink but it definitely has ageing potential.

Tech facts: 

Yield: 15 - 25 hl/ha

Vinification: Destemmed with partial crush, 3-4 days maceration, before spontaneous
fermentation in 500L barrel in part and stainless steel. 21 days on skin. Basket pressed.
Ageing in 500L barrels and stainless steel on fine lees for 36 months. No fining or
filtration.

Terroir: Heavy clay and limestone. 1-65m altitude. Selection from 5 parcels
between Peyriac-de-Mer and Bages. Corbières maritime.

Vintage: A very dry winter was followed bysome rain in early spring. Although there was a fair flowering, hydric stress dominated the months of June and July and August. Heavy mid-September rain delayed vintage without causing any disease issues. Early picked fruit entered the cave, higher in acids with some greenery. The later picked , post rain fruit, had riper phenolics and was lower in acids.
